Are you a waffle lover and worry about the high carb and sugar load in it? Well we've got you covered! Today we've got a special waffle recipe for you that's not only absolutely delicious but its also really healthy. Think...Oatmeal healthy!
As always our philosophy is, look for the food you really love and then find ways to make it healthy. We'd been craving waffles lately and decided to try a simple recipe with some really healthy ingredients and it turned out sooo good that we thought we would share with you.
You will need a waffle maker for this recipe so make sure to get one. You will love these waffles so much that you will be using your waffle maker pretty often 🙂
RECIPE – Makes 4-5 Waffles
INGREDIENTS: ⠀
- 2 Cups Oats⠀
- 2 Tbsp Fibergy
- 2 Eggs⠀
- 1.5 Cup Unsweetened Almond Milk ⠀
- 2 Tbsp Coconut Sugar (or 1 Banana)
- 1 Tsp Baking Powder⠀
- 1 Tsp Cinnamon ⠀
DIRECTIONS:⠀
- Turn on the waffle maker.
- Blend the oats in a blender to make powder.
- Blend all the ingredients in a blender.
- Spray a little coconut oil spray on the waffle maker and then pour the mixture onto it. ⠀
- Let the mixture cook.
- Each waffle maker is a little different. The one we use is an automatic so the green light goes on when its done. So just check the settings on yours and let it cook accordingly. We usually leave our waffles in for a bit longer till they get crispy.
- Top it up with some home-made chocolate, berry compote and whipped cream.
BERRY COMPOTE
INGREDIENTS:
- 1 Cup Mixed Berries
- 1/2 Cup Water
- 1-2 Tbsp Coconut Sugar (According to taste)
DIRECTIONS:
- Put the berries and water into a non-stick pan and let them heat
- Once the mixture starts to dry up a bit, add the sugar and mix it up.
- When the berries have a good consistency, your sauce will be ready.
- If you feel like your sauce is not getting thick, you can add 1/2 tsp of cornflour to it. This will help thicken up the sauce.
- Refrigerate the sauce and then use it on top of the waffles.
